Delivery kitchens run like small plants
A ghost kitchen building is closer to a light industrial site than a restaurant. A warehouse is divided into rows of kitchen units, product arrives at a dock, orders leave through a pickup window and drivers come and go all day. Denali cleans these buildings with industrial habits: zone-by-zone plans, machine scrubbing, drain care and visits timed to the slow hours between dayparts.
Ghost kitchens differ from shared commissaries. There are fewer tenant handoffs and more rapid turnovers between lunch, dinner and late-night orders, and the front of the building is a pickup area rather than a dining room.
Ghost kitchens in the Sacramento region
Sacramento has built a real cluster of delivery-only kitchens. Many of them divide a warehouse into rows of small kitchen units, with orders collected at a pickup window.
Delivery-only kitchen cleaning is available in the Sacramento region, in Oakland and the East Bay, around Stockton in the Central Valley and in Reno, from single units to multi-kitchen buildings.
Lines, floors and drains
Most deep cleaning happens overnight, between the last order and morning prep. Cook lines, prep tables and equipment exteriors are degreased, backsplashes scrubbed and handles wiped.
Corridors and kitchen floors take constant traffic, so crews machine-scrub quarry tile and sealed concrete, roll out what moves to clean beneath it, and flush floor drains and floor sinks. Anti-fatigue and entry mats are lifted, washed and dried.
Packing stations, pickup windows and driver areas
Packing stations are cleaned top to bottom: table surfaces, printers, bag racks and container shelving wiped, packaging scraps cleared and the floor beneath swept and mopped.
Pickup windows, driver shelves, order screens and waiting areas are cleaned and disinfected on every visit, with entry glass and door hardware included. A clean pickup point keeps drivers moving and protects the brands cooking inside.
Docks, cold storage and staff rooms
Receiving doors and dock aprons collect cardboard, pallet debris and spilled product. Crews sweep and scrub them, and our loading dock and parking area cleaning keeps the driver lot clear. Walk-ins are swept and mopped, gaskets and handles cleaned, and drips under racks removed.
Staff restrooms, hand sinks, locker areas and break rooms are cleaned and restocked, so the people working long delivery shifts have clean places to step away to.
Waste rooms, enclosures and pest pressure
A delivery kitchen building produces waste at production volume: food scraps, oily containers, torn bags and pallets of cardboard. Interior bins are emptied and washed, waste room floors and walls are scrubbed, and compactor and dumpster areas are swept so spilled food does not sit overnight. Heavy grease on enclosure pads is lifted with our industrial pressure washing.
Cleared food debris and clean corners leave your pest control provider much less to fight. Shift reports note spills, crumbs or gaps the crew finds behind equipment, so building management can deal with them quickly.
Shared corridors between kitchen units carry carts, deliveries and staff all day. Crews scrub them on every overnight visit and keep the corridor clear of stray boxes and rolling racks so the morning crew starts with an open path.
Liners, towels and soap at every sink
A delivery kitchen building goes through can liners, paper towels and hand soap fast, and one empty dispenser at a hand sink can slow a line in the middle of a dinner rush. Denali can provide those janitorial supplies, from toilet tissue, towels, hand soap and sanitizer to seat covers, trash bags and liners, and install matching dispensers. Crews can also restock from the supplies your building already buys.
On each visit, crews refill the hand sink stations in every kitchen unit, the staff restrooms and the driver waiting area, and leave spare liners at the waste room and packing tables. Low stock or a broken dispenser goes into the shift report, so building management hears about it before the morning prep crew does.
Scheduling and price
Buildings that cook around the clock can choose shorter visits by zone, so each row of kitchens, the packing area and the pickup lobby are cleaned without halting orders. Day porters can cover restrooms and the pickup area during peak hours.
Price follows building size, the number of kitchen units, operating hours, visit frequency and floor scrubbing. Buildings that also rent kitchen time to outside caterers can pair this plan with our commissary and shared kitchen cleaning.
A few useful answers
Common questions.
When do you clean a building that cooks for delivery all day?
Most often overnight between the last order and morning prep, or zone by zone for round-the-clock buildings.
Is the driver pickup area included?
Yes. Pickup windows, driver shelves, order screens, waiting areas, entry glass and door hardware are cleaned on every visit.
Do you clean the loading dock at a ghost kitchen?
Yes. Dock aprons and receiving doors are swept and scrubbed, and the driver lot can be added.
Do you clean waste rooms and dumpster areas?
Yes. Bins are washed, waste room floors and walls are scrubbed and enclosure pads are swept, with pressure washing for heavy grease.
Can you provide the liners, paper towels and hand soap?
Yes. Denali can supply them, install dispensers and refill every station on each visit, or crews can restock from the building’s own supplies.
